This week’s theme is beans…I grew up not liking beans except of course baked beans in tomato sauce (Hunt’s in particular). I don’t even like sitaw uptil now. I am posting an old photo of a family favorite dish which I make as often as once a week…one of my first posts in this blog too. (Click here to view the story behind why I cook it a lot).

To borrow from that write up:

This dish is a good combination of iron rich foods which all my kids like. Mung beans are rich in iron, thiamin, magnesium and folate, which helpkeep the body healthy. Shrimps, like other seafoods are also a good source of iron. Spinach also has iron but contains phytate (an iron absorption inhibitor), that is why it is a good thing that this recipe includes tomatoes. They are a good source of vitamin C which helps in the body’s absorption of iron.
