I’ve never been fond of fruitcakes and I often complain about the sour-y taste of cakes here because almost all have fruits in them. I never intended to try changing that until I tasted mom-in-law’s own creation last week. It is a lot different than the fruitcakes I’ve tried — those that I tried where only bite-sizes.
It could have been the fruits that are in that made this one different. She didn’t make the famous Stollen but really what she did was too good, hubby and I ate it for midnight snacks this week. Mom-in-law put some dried figs, walnuts and candied fruits the cake is known for. Walnuts are my least favorite nuts because I find them bitter. Here, it has a different blend with the cake and the fruits. She had perhaps minimally soaked it in spirit so there’s none of that taste I hate…
